Sims joined Southampton's Academy from the Elite Training Centre in 2011. After impressing with the under-23s, he made his senior debut on 27 November 2016 in a Premier League match against Everton, quickly providing an assist for Charlie Austin in Southampton’s 1–0 win. He made his Europa League debut in a 1–1 draw against Hapoel Be’er Sheva and later assisted the winning goal in Southampton’s EFL Cup semi-final victory over Liverpool.

In August 2018, Sims joined Reading on a season-long loan but was recalled in January. He then moved on loan to New York Red Bulls in August 2019, scoring his first professional goal during the MLS Cup Playoffs. After a brief loan at Doncaster Rovers in 2020, he rejoined them for the remainder of the season.

Released by Southampton in June 2021, Sims signed for Ross County in February 2022, leaving when his contract expired in July 2024.

On 15 August 2024, Sims joined National League side Yeovil Town.
